Easiest Easter Dinner

Sometimes I love to cook, and sometimes I love for it to just look like I worked all day.  Easter Sunday and it was a day that I just wanted it to look (and taste) like I worked hard!!  Potato rolls from the bakery, asparagus from the produce (easy enough – love the color and it classifies as a spring vegetable to me), my go-to mashed potatoes (for as much work as homemade mashed potatoes are – the store bought Bob Evans or Meijer Brand cannot be beat for time, effort, clean up and taste), that leaves us with the meat.  I planned to make a rump roast and try one of these new Campbell’s packets I bought at the grocery store.

Yesterday, I started feeling guilty because I wasn’t making an Easter ham.  The rest of the family loves ham – but I do not.  So I never really make it.  I decided I needed to do a ham, so I bought a small 2 1/2 pound pre-smoked Kentucky ham.  It was pre sliced and all.  I doctored it up by brushing maple syrup over it and sprinkling it with whole cloves.  I covered it in foil and baked it in the oven for 30 minutes,  The smell and flavor were great and the presentation was acceptable for company.  The pot roast (rump roast) cooked in the crock pot all day with the Tavern Pot Roast sauce (green label).

Actual prep time for everything was SO MINIMAL.  Taste and presentation were OPTIMAL.  I highly recommend the Campbell’s Slow Cooker Tavern Pot Roast – I bet the others are great too!

For dessert, I kept with the theme of AWESOME but EASY!!  Check out the recipe for Strawberry Rhubarb Dump Cake and finish off your meal with the taste of spring and pop of color!
